Preheat the oven 180 degree Celsius. Rub the chicken breast with the olive oil or coconut oil and season with salt. Place the chicken on a baking tray and roast until done, about 40 minutes.</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 2. Using a mortar and pestle or food processor, combine chilies, shallots, garlic and turmeric, grind to a smooth paste. If you using a blender, make sure to add a little bit of water or cooking oil to blend the ingredients.</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 3. Heat 5 tablespoons of the cooking oil in a wok, add in the spice paste, lemongrass, bay leaves, and kaffir lime leaves, stir-fry until fragrant. Season with salt and sugar to taste. Add in another tablespoon of cooking oil if you want. Remove from the heat and transfer into a bowl, set aside.</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 4. Back to the chicken in the oven. When it’s done roasting, remove from the oven and let cool. Discard the skin and deboned, shred the meat into medium-thick strips. Take a spoonful of the spice paste, combine with the chicken meat with the spice paste, toss well until the chicken until the chicken is perfectly coated with the spice paste. Add another spoon of the spice paste if not well coated. Serve the remaining spice paste as a side or as sambal.</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 5. Meanwhile, heat a non-stick skillet over medium heat, place half of the chicken and stir-fry for about 2 minutes, repeat the same for the remaining chicken. (I did this step because I found that the shredded chicken meat was a bit wet after being mixed with the spice paste so by doing the quick stir-fry, the texture is what I wanted, a slightly dried up shredded chicken that I love. If you use charcoal to grill the chicken, coal-grill, other than oven grill/roasting, I don’t think of this step is required.)</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 6. Transfer the chicken onto a a serving plate and squeeze the juice of the lime before serving.</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> <span style="color: #990000;">Note:</span> The limau lime (jeruk limo/nasnaran Mandarin), or jeruk sambal is used for enhancing the flavor of sambal and sauces. Stir in the kecap manis and lime leaves, then spread the beef out on a baking sheet or large dish, and allow to cool until cool enough to handle.</li> <li style="text-align: justify;">Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the beef cubes from the tray, and thread onto skewers, reserve any leftover sauce for basting.</li> <li style="text-align: justify;">Cook on preheated grill for a few minutes until slightly browned; baste occasionally with the leftover sauce.</li> </ol> </div>

Add the coconut milk and salt and stir well to combine with the flavoring paste. Raise the heat slightly and let the coconut milk come to a steady, gentle simmer, stirring occasionally, for about 10 minutes. Taste the broth. While the broth continues to simmer, rinse the chicken under cold running water and pat it dry. To make the sauce, if using unroasted dried shrimp paste for the sauce, wrap it up in a 3-inch-square piece of aluminum foil like an envelope. Flatten the packet with the heel of your hand. Roast the packet on the stovetop directly over a medium-high flame for 2 to 3 minutes, turning occasionally with tongs, until it is briny smelling; expect steam to shoot from the foil. Remove from the heat and let cool. Blast your exhaust to get rid of odor. (If using preroasted shrimp paste, skip this step.)</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 2. Use a small food processor to grind the shrimp paste, palm sugar, and chiles to a fine texture. Add the tamarind and sweet soy sauce and process until smooth (you’ll have about 1/2 cup). Transfer to a bowl if using soon. Or, refrigerate in a tightly capped jar for up to a week; return to room temperature before using.</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 3. Halve the tofu crosswise, then cut each half into squarish pieces about 21/4 inches wide and 3/4 inch thick. You should have 12 pieces total. Put in a bowl. Put the bean sprouts in another bowl. Set aside.</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 4. Bring the water to a boil. Turn off the heat. After the boiling subsides, measure 3 cups and add the salt, stirring to dissolve. Pour this salted water over the tofu, covering it. Set aside for 15 minutes.</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> Pour the remaining (unsalted) hot water over the bean sprouts to cover. When the sprouts have softened, about 2 minutes, drain, flush with cold water, and set aside to drain well. The bean sprouts can be prepped several days in advance and refrigerated.</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 5. When the tofu is ready, pour off the water, then transfer the pieces to a non-terry dishtowel or double layer of paper towels placed atop a plate. Let drain for about 
15 minutes.</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 6. Heat 11/2 inches of oil in a wok, deep skillet, or saucepan over high heat to between 360° and 370°F. Blot excess water from the tofu one last time, then fry in batches of 4 to 6 pieces, sliding them into the oil, then gently stirring them with chopsticks or a skimmer to fry evenly and prevent them from sticking. If they stick, let them fry until they are light golden before nudging them apart, or remove the pieces from the oil, separate, then quickly replace them in the oil to finish frying. The tofu should be crisp and deep golden after 2 to 3 minutes. Drain the fried tofu on paper towels. Return the oil to temperature before frying another batch. Set aside to cool. The tofu may be fried and refrigerated up to 5 days ahead; return it to room temperature before grilling.</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 7. To grill the tofu, prepare a very hot charcoal fire (it’s ready when you can hold your hand over the rack for only 2 to 3 seconds) or heat a gas grill to high. Grill the tofu for about 3 minutes on each side, until hot and crisp with some dark charring. Dab some sauce on the tofu before it comes off the grill, for caramelization, if you like. Transfer to a plate and let cool for a few minutes. (Alternatively, broil the tofu in a toaster oven directly on the rack for about 6 minutes, turning midway, until hot and slightly crisp at the edges.)</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 8. Lay each piece of tofu on your work surface and use a paring knife to cut a pocket into one side. To assemble, drizzle about 1/2 teaspoon of sauce into each pocket before stuffing in the bean sprouts and cucumber, letting a few hang out of the opening for flair.</div> <div style="text-align: justify;"> <br /></div> <div style="text-align: justify;"> 9. Serve the pockets on individual plates or a platter. Drizzle on some of the sauce and sprinkle on the peanuts. Offer extra sauce on the side. For everyday home cooks, I will advise you to serve them once the beef rendang is done, but save some leftover as it only gets better overnight.</div><br /> <br /> <div style="text-align: justify;"><strong>The Recipe:</strong> Beef Rendang (Rendang Daging) or Spicy Beef Stew with Coconut</div><br /> <div style="text-align: justify;"><strong>Ingredients:</strong></div><br /> <div style="text-align: justify;">1 1/2 pound boneless beef short ribs (cut into cubes)</div><div style="text-align: justify;">5 tablespoons cooking oil</div><div style="text-align: justify;">1 cinnamon stick (about 2-inch long)</div><div style="text-align: justify;">3 cloves</div><div style="text-align: justify;">3 star anise</div><div style="text-align: justify;">3 cardamom pods</div><div style="text-align: justify;">1 lemongrass (cut into 4-inch length and pounded)</div><div style="text-align: justify;">1 cup thick coconut milk</div><div style="text-align: justify;">1 cup water</div><div style="text-align: justify;">2 teaspoons tamarind pulp (soaked in some warm water for the juice and discard the seeds )</div><div style="text-align: justify;">6 kaffir lime leaves (very finely sliced)</div><div style="text-align: justify;">6 tablespoons kerisik (toasted coconut)</div><div style="text-align: justify;">1 tablespoon sugar/palm sugar or to taste</div><div style="text-align: justify;">Salt to taste</div><br /> <div style="text-align: justify;"><strong>Spice Paste:</strong></div><br /> <div style="text-align: justify;">5 shallots</div><div style="text-align: justify;">1 inch galangal</div><div style="text-align: justify;">3 lemongrass (white part only)</div><div style="text-align: justify;">5 cloves garlic</div><div style="text-align: justify;">1 inch ginger</div><div style="text-align: justify;">10-12 dried chilies (soaked in warm water and seeded)</div><br /> <div style="text-align: justify;"><strong>Method:</strong></div><br /> <div style="text-align: justify;">1. Chop the spice paste ingredients and then blend it in a food processor until fine.</div><div style="text-align: justify;">2. Heat the oil in a stew pot, add the spice paste, cinnamon, cloves, star anise, and cardamom and stir-fry them until aromatic.</div><div style="text-align: justify;">3. Add the beef and the pounded lemongrass and stir for 1 minute.</div><div style="text-align: justify;">4. Add the coconut milk, tamarind juice, water, and simmer on medium heat, stirring frequently until the meat is almost cooked.</div><div style="text-align: justify;">5. Add the kaffir lime leaves, kerisik (toasted coconut), sugar/palm sugar, stirring to blend well with the meat.</div><div style="text-align: justify;">6. Lower the heat to low, cover the lid, and simmer for 1 – 1 1/2 hours or until the meat is really tender and the gravy has dried up.</div><div style="text-align: justify;">7. Add salt to taste. If not sweet enough, add more sugar to taste.</div><div style="text-align: justify;">8. Serve immediately with steamed rice and save some for overnight.</div><br /> <div style="text-align: justify;"><strong>Cook’s Note:</strong></div><br /> <div style="text-align: justify;">To prepare the kerisik or toasted coconut, just add the grated coconut to a dry wok and stir continuosly until they turn golden brown. give it try, good luck.</div>
