Rinse the udon with cold running water, drained and set aside. Mix all the ingredients in the Sauce in a small bowl, stir to blend well. Set aside.</div>

Prepare the soy sauce and cut chilies condiments in a small saucer. Just add some soy sauce to the cut chilies.</div>

Heat up a wok and add the oil (or lard). When the hot is fully heated, add the garlic and stir fry until aromatic. Add the shrimp and fish cake and stir-fry until the shrimp is half cooked. Add the carrot and napa cabbage and stir for a few times. Add the udon noodles into the wok, follow by the Sauce. Stir continuously to combine all the ingredients in the wok. Let cook for a little bit, stir a few times and make sure the udon noodles are cooked through. Dish out and serve immediately with the cut chilies and soy sauce condiment.</div>

Add the chicken and quickly stir fry, until the chicken is half cooked. Add the onion, green beans, carrot, green and red bell peppers, bird’s eye chilies and stir to combine well with the chicken. Add the sweet soy sauce and fish sauce, stir to blend well. (If you want your chicken to be a little saucy, you can add two tablespoons of water now.) As soon as the chicken and all ingredients are cooked through, dish out and serve immediately with steamed rice.</div>

1. Marinate the chicken meat with the baking soda for 15-20 minutes and then rinse the chicken thoroughly. (Please make sure that the chicken is properly rinsed clean of the baking soda.)</div>

2. Pat the chicken meat dry with paper towels and then marinate with the rice wine and corn starch, for 15 minutes.</div>

3. Mix the sauce together and set aside.</div>

4. Heat up a wok with 1 tablespoon of cooking oil and stir-fry the chicken meat until the color turns white or half-cooked. Dish out and set aside.</div>

5. Add another 1 tablespoon of cooking oil into the wok and add in the ginger slices, bell peppers and onions.</div>

6. Stir-fry until you smell the peppery aroma from the green peppers and add the chicken meat back in.</div>

7. Add in the sauce and stir continuously until the chicken meat is cooked and well coated with the sauce. Add salt to taste, if you like.</div>

1. Preheat the oven 180 degree Celsius. Rub the chicken breast with the olive oil or coconut oil and season with salt. Place the chicken on a baking tray and roast until done, about 40 minutes.</div>

2. Using a mortar and pestle or food processor, combine chilies, shallots, garlic and turmeric, grind to a smooth paste. If you using a blender, make sure to add a little bit of water or cooking oil to blend the ingredients.</div>

<div style="text-align: justify;">
3. Heat 5 tablespoons of the cooking oil in a wok, add in the spice paste, lemongrass, bay leaves, and kaffir lime leaves, stir-fry until fragrant. Season with salt and sugar to taste. Add in another tablespoon of cooking oil if you want. Remove from the heat and transfer into a bowl, set aside.</div>

4. Back to the chicken in the oven. When it’s done roasting, remove from the oven and let cool. Discard the skin and deboned, shred the meat into medium-thick strips. Take a spoonful of the spice paste, combine with the chicken meat with the spice paste, toss well until the chicken until the chicken is perfectly coated with the spice paste. Add another spoon of the spice paste if not well coated. Serve the remaining spice paste as a side or as sambal.</div>

5. Meanwhile, heat a non-stick skillet over medium heat, place half of the chicken and stir-fry for about 2 minutes, repeat the same for the remaining chicken. (I did this step because I found that the shredded chicken meat was a bit wet after being mixed with the spice paste so by doing the quick stir-fry, the texture is what I wanted, a slightly dried up shredded chicken that I love. If you use charcoal to grill the chicken, coal-grill, other than oven grill/roasting, I don’t think of this step is required.)</div>

6. Transfer the chicken onto a a serving plate and squeeze the juice of the lime before serving.</div>

<span style="color: #990000;">Note:</span> The limau lime (jeruk limo/nasnaran Mandarin), or jeruk sambal is used for enhancing the flavor of sambal and sauces. 2. Using a mortar and pestle or a mini food processor, blend the shallot, garlic, red chili, and toasted belacan. Transfer the blended flavoring paste into a small saucer.</div>

Now add the lemongrass, kaffir lime leaves, & basil, then Sauté some more for 3 minutes until the lemony aroma arises.</div>

3. Add the coconut milk and salt and stir well to combine with the flavoring paste. Raise the heat slightly and let the coconut milk come to a steady, gentle simmer, stirring occasionally, for about 10 minutes. Taste the broth. It should be spicy and rich.</div>

4. While the broth continues to simmer, rinse the chicken under cold running water and pat it dry. Poke the chicken flesh with a fork.</div>

1. To make the sauce, if using unroasted dried shrimp paste for the sauce, wrap it up in a 3-inch-square piece of aluminum foil like an envelope. Flatten the packet with the heel of your hand. Roast the packet on the stovetop directly over a medium-high flame for 2 to 3 minutes, turning occasionally with tongs, until it is briny smelling; expect steam to shoot from the foil. Remove from the heat and let cool. Blast your exhaust to get rid of odor. (If using preroasted shrimp paste, skip this step.)</div>

2. Use a small food processor to grind the shrimp paste, palm sugar, and chiles to a fine texture. Add the tamarind and sweet soy sauce and process until smooth (you’ll have about 1/2 cup). Transfer to a bowl if using soon. Or, refrigerate in a tightly capped jar for up to a week; return to room temperature before using.</div>

3. Halve the tofu crosswise, then cut each half into squarish pieces about 21/4 inches wide and 3/4 inch thick. You should have 12 pieces total. Put in a bowl. Put the bean sprouts in another bowl. Set aside.</div>

4. Bring the water to a boil. Turn off the heat. After the boiling subsides, measure 3 cups and add the salt, stirring to dissolve. Pour this salted water over the tofu, covering it. Set aside for 15 minutes.</div>

Pour the remaining (unsalted) hot water over the bean sprouts to cover. When the sprouts have softened, about 2 minutes, drain, flush with cold water, and set aside to drain well. The bean sprouts can be prepped several days in advance and refrigerated.</div>

5. When the tofu is ready, pour off the water, then transfer the pieces to a non-terry dishtowel or double layer of paper towels placed atop a plate. Let drain for about  15 minutes.</div>

6. Heat 11/2 inches of oil in a wok, deep skillet, or saucepan over high heat to between 360° and 370°F. Blot excess water from the tofu one last time, then fry in batches of 4 to 6 pieces, sliding them into the oil, then gently stirring them with chopsticks or a skimmer to fry evenly and prevent them from sticking. If they stick, let them fry until they are light golden before nudging them apart, or remove the pieces from the oil, separate, then quickly replace them in the oil to finish frying. The tofu should be crisp and deep golden after 2 to 3 minutes. Drain the fried tofu on paper towels. Return the oil to temperature before frying another batch. Set aside to cool. The tofu may be fried and refrigerated up to 5 days ahead; return it to room temperature before grilling.</div>

7. To grill the tofu, prepare a very hot charcoal fire (it’s ready when you can hold your hand over the rack for only 2 to 3 seconds) or heat a gas grill to high. Grill the tofu for about 3 minutes on each side, until hot and crisp with some dark charring. Dab some sauce on the tofu before it comes off the grill, for caramelization, if you like. Transfer to a plate and let cool for a few minutes. (Alternatively, broil the tofu in a toaster oven directly on the rack for about 6 minutes, turning midway, until hot and slightly crisp at the edges.)</div>

Prepare your favorite pizza crust and get ready to bake, as a regular pizza. Make sure that you have a fairly high ridge, as the there is a lot of mixture, and it is fairly watery. Pugliese bread dough works very well for a crust.</div>

Beat eggs lightly. Add cheese, onion and salt and pepper. Mix gently.</div>

Lightly brush olive oil over the pizza base. Pour mixture over the crust. Place rings of green pepper over the top. You can also include onion rings, mushrooms, or other favorite Pizza toppings. Color contrast helps here, as the mixture is rather plain looking.</div>

Bake at 450 degrees for about 15-20 mins, or when crust is brown and egg mixture is set.</div>
